Yes, bananas are great. They are great for preparing bread and puddings and fast food on the go.

But then, once you have a plantain

I’m not saying the plantains destroyed my bananas. BUT I will say it changes lives. Because although plantains and bananas may look similar and have a similar structure, the tastes are very different. Sure, both are sweet fruits, but ripe plantain has a level of sweetness that a banana just can’t compete with.

Plantains are also very versatile fruits, such as bananas. Thanks to the extra sweetness and denser consistency of plantain, it works better really decadent dishes. For example, you can prepare Magic Gluten Free Tortillas, Mofongo, Paleo Chinese Dumplings (really!) And – of course, fried plantains.

How to make sweet fried bananas

I usually fry these bananas either just before the main course is ready or when the appetizer cools before it’s time to serve. Because they really only take about 5 minutes cook!

First, peel the plantains and cut them at an angle of half an inch of oval.

Set a large pan or cast iron pan to a medium temperature. Then place the “holding plate” with a paper towel on its side.

Add the butter to a hot pan. Once it melts, add a tiny pinch plantain to oil to make sure it has the right temperature. If it starts to crackle and cook quickly, the butter is ready. No sizzling and probably not hot enough. Heat or reduce the temperature as needed.

Now gently add a crushed clove of garlic and plantain to the pan, in one layer. The pieces should be spread out slightly so that they do not touch. If the pan too crowded you won’t get that beautiful golden brown fry on the edges. So depending on the size of the pan, you may need to work in two batches.

Fry the plantains 2-3 minutes per page, flipping back and forth until it reaches a golden brown color.

FAQs

Are Fried Plantains Healthy?

Plantains are gluten-free and vegetarian. However, because they are very sweet when ripe and fried in butter, no, they are not really “healthy”. But they they are Tasty!

Why aren’t my fried plantains sweet?

If your plantain tastes and feels more starchy, like potatoes, you probably haven’t used a sufficiently mature plantain. They must be almost or completely black to achieve sweet caramelisation when fried in hot oil.

What do you eat with fried bananas?

Plantains come from Southeast Asia before becoming a staple in African and then Caribbean and Central American cuisine. They really pair up with almost any dish! We like to enjoy them with black beans or Frijoles de la Olla, Carne Guisada (con Papas), Jamaican peas and rice, spicy Jollof rice and Cuban beef picadillo.

You can also serve homemade sweet fried bananas with sauces such as ketchup, banana ketchup, sweet chili sauce, your favorite hot sauce or garlic sauce.

How long do homemade fried plantains last?

They have the best texture and taste when enjoyed shortly after frying. After cooling, you can store the remaining plantains in an airtight container and store them in the refrigerator up to 3 days. Preheat in the oven, toaster or fry quickly on the hob. I do not recommend trying to freeze fried sweet bananas.
