  • Preheat oven to 350 degrees F. Line several baking sheets with baking paper and set aside.

  • Measure the oats in a large bowl. Then break the eggs into oats and add water and vanilla. Stir into the coating to saturate the liquid with the oats.

  • Add butter to the bowl of the electric mixer. Cover for 1 minute to soften. Then add the peanut butter and both sugars. Beat on high for 3-5 minutes to break up the sugar crystals.

  • Scrape the bowl with a spatula and beat again.

  • Turn the mixer low and mix in the flour, baking powder and salt. When the mixture is completely mixed, start adding the oat mixture.

  • Scrape the bowl again, then turn on the power and stir in the chocolate chips.
