CopyCat Larabar Recipe

I love sweets and comfort food just like the next person …. and I will never stop eating them.

However, the majority of the time I try to feed my family “whole foods” free of processed ingredients. I feel like doing this not only keeps us healthy and strong, it also makes our splurge food much more enjoyable.

Along with fresh fruits and vegetables, one of the convenience snacks I always keep at home is Larabars.

I buy the healthiest varieties like Apple Pie, Cherry Pie, and Blueberry Blueberry made only from unsweetened dried fruits and nuts … not the chocolate varieties. That way I can say “YES” every time the kids ask for a Larabar as a snack.

But after I started buying Larabars by the case, I noticed a huge increase in our monthly grocery bills. $ 1.50 a pop adds quickly when your family attends at least 4 of these babies a day.

So I decided to make homemade Larabars and see if they were worth the time and savings.

Verdict: Totally worth it.

Use the following formula to make any variety of fruit-and-nut larabars:

  • 1 1/2 cups raw nuts (use 2 cups nuts when working with sticky dried fruit)
  • 2 cups unsweetened fruit (always use at least 3/4 cup dates as the main binder)

Some taste suggestions

  • Cherry
  • Myth
  • Mango
  • Pineapple
  • Coconut

Can I freeze these bars?

Yes you can! I typically make an extra batch (or two) when I make these so we can have some in the freezer when we get low on low! Wrap the bars individually in plastic wrap or wax. Then store the entire batch in a large frozen zip bag before freezing.

Why is my mix dry?

This problem is usually caused by dry-out dates. If the dates are a little dry, they don’t stick together very well. When this happens, try adding 1-2 tablespoons of water to the mixture.

Two of my favorite companies, KitchenAid and Villeroy & Boch, came together to support Susan G. Common for the cure, in this Cook initiative for the cure.

Each “Pass the Plate” purchase raises $ 5 for Susan G. Common funds, each time she passes to a friend and registers here.

They make spectacular holiday gifts that encourage continuous giving and goodwill to men and women. I like to give these to friends, stack high and homemade treats, then encourage my friends to pass the plates on to someone else.

We are all affected by cancer in some way … This fall my family personally celebrated the life and recovery of one friend and mourned the loss of another.

Passing the Plate is a great way to give a gift that makes a real difference in people’s lives!
